Golden Chicken and Autumn Vegetables

Golden Chicken and Autumn Vegetables Recipe:

Ingredients: 

(Yield: 4 serving)

4 bone in chicken breasts halves (8 ounces each), skin removed

2 large sweet potatoes, peeled and cut into large chunks

2 cups fresh or frozen cut green beans

1 cup chicken broth

1 tablespoon minced fresh parsley

½ teaspoon garlic powder

½ teaspoon dried rosemary, crushed

¼ teaspoon dried thyme


Directions: 

1.     In a large nonstick skillet, brown chicken over medium-high heat for 4-6 minutes on each side or until a meat thermometer reads 170 degrees.

2.     Add sweet potatoes and beans

3.     In a small bowl, combine remaining ingredients; pour over chicken and vegetables

4.     Bring to a boil

5.     Reduce heat; cover and cook over low heat for 20 minutes or until heated through
