Almost Sourdough Breads

These breads are 1/2 sourdough and 1/2 Yeast risen. We mix these breads first thing in the morning, and bake them later that day. They have some of that sourdough tang and flavor depth, but not to the level of our hearth breads:

ITALIAN: Perfect for Paninis. This 2.5lb loaf has a crusty exterior and uniform crumb. It resembles a giant sourdough loaf.

MUFFALETTA: Like a foccacia, this oil crusted bread is pan baked and dusted with Italian seasoning and a little course salt.

CUBAN/BOLILLO: Torpedo shaped rolls with a lighter crumb that is great for subs and sandwiches. 6-8 inches long, with 2 score lines

24” SUB BUN: Same as the Cuban, but in a 2 ft long size, and wider, with 6-7 score lines.

PO BOYS: Similar to Cubans, but even lighter and more crisp. 6” long, with rounded ends and no scoring.
